Fried Buttermilk-Crispy Chicken with Olevano

Ingredients

 

- 2 boneless, skinless chicken breasts

- 1 cup buttermilk

- Salt and black pepper, to taste

- 1 tsp smoked paprika

- 1 cup all-purpose flour (seasoned with salt, pepper, and paprika)

- 2 eggs, beaten

- 1 cup breadcrumbs

- 3-4 tbsp Olevano Delicato Extra Virgin Olive Oil

- Optional topping: lemon-herb drizzle, fresh basil, or Olevano Balsamic glaze

 

Instructions:

 

 

1. Marinate the chicken breasts in buttermilk for at least 3 hours or overnight.

2. Remove the chicken from the marinade and pat dry with paper towels.

3. Season both sides with salt, pepper, and smoked paprika.

4. Dredge each breast in seasoned flour, dip in egg wash, then coat with

breadcrumbs.

5. Heat Olevano Delicato EVOO in a skillet over medium heat. Sear the chicken

for 4 minutes on each side until golden brown.

6. Transfer to a 400°F oven and bake for 15 minutes until fully cooked.

7. Let rest for 5 minutes, then top with your favorite finish.

 

Serve with a side salad or roasted vegetables for a complete meal!
