Healthier Olive Oil Brownies

Ingredients:

 

1/3 cup Olevano Extra Virgin Olive Oil

1/2 cup honey or maple syrup

2 large eggs

1 tsp vanilla extract

1/3 cup unsweetened cocoa powder

1/2 cup whole wheat flour (or almond flour for gluten-free)

1/4 tsp salt

1/4 tsp baking powder

Optional: 1/3 cup dark chocolate chips or chopped nuts

Instructions:

 

Preheat oven to 325°F (165°C). Grease an 8x8" baking dish or line with parchment.

In a bowl, whisk together olive oil, honey (or syrup), eggs, and vanilla.

Sift in cocoa powder, flour, salt, and baking powder. Stir until smooth.

Fold in chocolate chips or nuts if using.

Pour into pan and spread evenly.

Bake for 20–25 minutes, or until a toothpick comes out with a few moist crumbs.

Cool before cutting. Enjoy!
