

Olevano Burrito

Ingredients:
1 lb ground beef or shredded chicken
1 cup cooked rice
1 cup black beans, drained and rinsed
1 cup shredded cheese (cheddar or Mexican blend)
1/2 cup diced tomatoes
1/2 cup shredded lettuce
1/2 avocado, sliced
1/4 cup fresh cilantro, chopped
1 tbsp Olevano extra virgin olive oil
1 tsp chili powder
1/2 tsp cumin
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
4 large flour tortillas
Lime wedges and salsa for serving
Instructions:
Cook the Meat: In a skillet over medium heat, heat 1 tbsp of Olevano extra virgin olive oil. Add ground beef (or shredded chicken) and cook until browned. Drain excess fat if needed.
Season: Add chili powder, cumin, garlic powder, salt, and pepper. Stir well and cook for another minute.
Warm the Tortillas: Heat tortillas on a dry skillet for about 30 seconds per side.
Assemble the Burritos: Lay out the tortillas and evenly distribute the rice, beans, seasoned meat, shredded cheese, lettuce, diced tomatoes, and avocado slices.
Drizzle Olive Oil: Drizzle a little extra Olevano olive oil for added flavor.
Wrap It Up: Fold in the sides, then roll up tightly.
Serve: Cut in half and serve with salsa and lime wedges.
